Chardonnay 2008
Picked prior to the heat of this vintage the fruit was immediately crushed upon arrival at the winery then pressed, cold settled before being seeded with a desired yeast.
The ferment was held at 15C before the temperate was increased to allow most of the natural sugars to be removed.
The nose displays citrus flavours of grapefruit and nectarine along with some fig and nuttiness.
The palate is long, has a smooth slipperiness due the level of glycerine obtained during the ferment giving a fullness to its body, is soft, round, showing clean citrus, fig and nutty flavours with some creaminess evident due to the extended time on lees.
Drinks well with soft cheeses.
