Liqueur Chardonnay Alias: White Port Alias: Sex in a Bottle Tasting Notes: A sweet fortified wine made from 100% Chardonnay grapes. The fruit is analysed with acid and Sulphur. Once the analysis is rechecked and correct suitable yeast is added. As the wine ferments the Sugar content is checked regularly and when the desired amount is reached Grape Spirit is added to arrest the fermentation. The wine is then thoroughly stirred and the Alcohol checked. The fortified is then pressed and placed into barrels where it sites for a period of 3 plus years. The white port has been in old port barrels for approx 5 years resulting in a wine with a light tawny colour, a palate that is soft and full of luscious tropical fruit. The wine has a good length and is balanced by a soft acid, spirit finish. Great wine with cheese, or ice cream brulee served with marinated berries. Delicious drizzled over crushed ice as a refreshing summers drink. Makes a wonderful ice cream topping, giving a hint of almond flavour. |
