A versatile variety from the Rhone Valley in France used to soften Shiraz, blend with other Rhone whites or produce distinctive floral varietals on its own.

Our 2011 is a medium dry style having good weight, a soft viscous mouth feel with musk lolly florals giving a mischievous hint of sweetness.

Taste the flavour of apricot, peach & lemon before the intriguing spicy finish.

2006 Shiraz - $25



2006 saw a rebirth in Barley Stacks wine-making under the experienced & successful John Zilm. This Shiraz signalled the rich & consistent style to follow in subsequent vintages.

The wine has excellent colour, length & depth of flavour, is well balanced & structured, with soft fine grain tannins throughout.

Blackcurrant, plum & red berry flavours are well balanced with French oak & a hint of pepper. Will develop gracefully over many years.

With plenty of bottle age already taken care of, this is a great value offering for those appreciating a traditional big dry red.

A rich, full flavoured wine showing sweet Satsuma plums, black cherries with some spicy overtones, lingering Christmas Cake & chocolate flavours.

2006/2007 Cabernet Shiraz - $25



Rare combination of 2 vintages & 2 varieties: 2006 Cabernet & 2007 Shiraz. The well rounded long soft palate will age gracefully.

A smooth, sophisticated, complex blend with an intriguing hint of chalkiness to the palate with notes of liquorice, menthol & oak.

Fruit flavours linger of blackcurrant, cherries, plum, black & red berries.

Our 09 Cab Sav. has less than 12 months in bottle. We suggest you patiently store on the racks for trial in late 2013 - this Cabernet will settle & develop with time before showing its true potential.

Red Ratafia - $15



Made from Ruby port steeped with olives for one month.
A savoury style of port to be consumed as an aperitif with olives, antipasto, walnuts, cheeses and biscuits.

White Ratafia - $15



Viognier wine with brandy spirit added steeped with oranges and peaches for one month. A wonderful desert wine, not sweet, finishing very clean because of the acid in the oranges. Great with Brandy snaps and cream.

Marsala - $15



Ruby port mixed with white port then we have added herbs, spices and some dark chocolate for one month. Can be consumed or used as a cooking wine.

Vermouth - $15



Vermouth is a fortified wine with a number of different herbs added for flavour. We have used Viognier grapes picked early in the season when there was little sugar in the fruit and fermented the juice dry. We have then steeped the wine in herbs for up to 1 month.

This Vermouth is beautiful when used to glaze roasts, great in Martinis or as a long drink with soda water or lemonade.
