2010 Viogscato ***SOLD OUT***



Colour: water colour with slight green tinge

Aromatics: apricots with slight stone fruit characters

Palate: A Moscato style wine made with Viognier grapes. Light in the mouth with subtle flavours of apricots and peach with a hint of frizzante from the natural carbon dioxide given off during fermentation.
The wine is well balanced with the sweetness of the natural grape sugars combined with crisp acidity.

Food: this wine can be used as an aperitif or served with desserts such as cheesecake or fruit salad. Serve well chilled 4ºC.

Alcohol: 4.5%





2010 Viognier



Colour: Water colour with light green tinge.

Aromatics: Apricots, slight peach and spice.

Pallet: A soft, mouthfilling Viognier showing apricots, peach and an array of secondary fruit flavours with hints of spice. A well balanced wine of fruit and acid giving it great length with lingering apricot flavour at the finish. Although a pallet full of flavour the wine dances light on its feet due to the terrior, climate of the very diverse Yorke Peninsula.

Food: By the glass or with your favourite curry, spicy foods.

Alcohol: 14.5%





2010 Chardonnay



Colour: water colour with green tinge

Aromatics: nectarine, peach with hints of figs, cream and toasted nuts.

Palate: A well-weighted wine showing a bouquet of nectarines, peaches with hints of grapefruit, figs, nuts, cream, toast all harmoniously bound. The finish is dry, clean with a soft citrus acid finish.

Food: Ideally suited with seafood risotto, cheese and cream dishes.


Alcohol: 13.0%





2010 Rosé



Colour: Magenta

Aromatics: Blackcurrants,plum, and red berries

Palate: Cabernet Sauvignon berries crushed and pressed then cold fermented. The wine has a fresh flavour of blackcurrants,plums and red berries with a touch of spice. This wine has some natural sugar residual left to enhance its flavour but is balanced by the crisp acidity of the fruit. A wine to enjoy with Australia’s great summer weather either by the glass or with food.

Food: Enjoy this wine with fresh fruit and cheese platters and pasta dishes

Alcohol: 12.5%




2006 Shiraz



Colour: Black with dark red hue

Aromatics: Lifted Pepper, Sweet Satsuma plum, cherries, red berries, Mocha.

Palate: A classy, stylish, elegant wine with mouth filling bright fruit flavours of Sweet Satsuma plums, black cherries, red berries showing lifted pepper and finishing with a veil of soft, dusty tannin with lingering cherry, vanilla and mocha flavours. A small amount of Cabernet was added for length and complexity to this wine which does give some subtle savoury flavours.

Food: Beef Steak medium rare, meats cooked with sweet berry fruits and mature cheeses.

2007 Shiraz



Colour: Black with deep red hue

Aromatics: Oak, spice, cherry and plums

Palate: Mouth filling wine, elegant, rich in fruit flavours showing good oak, acid and tannin. The palate is long, well balanced, well structured with rich fruit flavours of sweet satsuma plums, black cherries, blackberries, spice, oak and tannin. The wine finishes with soft acid and lingering spicy, chocolate/cherry, flavours.

Food: Beef, casseroles, stews and mature, hard cheeses.

2006 Cabernet Sauvignon



Colour: Black cherry with a dark red hue.

Aromatics: Cassis, blackberry, cherries, Satsuma plums, spices, mint and cedar.

Palate: A stylish, well weighted wine, mouth filling with an abundance of black currants, sweet Satsuma plums, red berries all encased in spices and fine grained tannins which abound. The finish has lingering plum and mixed berry flavours with soft acid.
The wine is exquisitely balanced with fruit and French oak, has great depth and length of flavour and will develop gracefully over many years.

Food: Rich gamey foods, mature cheese.

2006/2007 Cabernet Sauvignon /Shiraz



Colour: Black with dark red hues

Aromatics: Savoury, mint, blackberry, black currants, plums, cherries and spice.

Palate: A wonderful food wine combining two years of 06/07 vintages. An elegant, well weighted, rounded wine with soft, fine grain tannins throughout with a generous amount of rich fruit flavours. The palate is well structured, very long and full of sweet satsuma plums, blackberries, cherries, black currants, good oak and spices. Careful cellaring over many years will see the flavours of these 2 vintages marry and therefore, age gracefully.

Food: Gamey foods, rich meats and an assortment of softer cheeses.

2005 Shiraz

Colour: Black cherry with red and light purple hues

Aromatics: Vanilla, white pepper, spice, plums, blackberry, mixed red berries, ground coffee and mocha.

Palate: A wonderfully weighted wine showing plum and an array of mixed berries and cherries, interwoven with vanilla flavour, blackberries, spices, ground coffee, mocha and some lingering chocolate. The palate is well structured being in balance with oak, both new and seconds, finishing with a veil of soft tannin and acid.

Food: This wine goes well with meats and cheeses.

Alcohol: 14%





White Ratafia



Viognier wine with brandy spirit added steeped with oranges and peaches for one month. A wonderful desert wine, not sweet, finishing very clean because of the acid in the oranges. Great with Brandy snaps and cream.

Red Ratafia



Made from Ruby port steeped with olives for one month.
A savoury style of port to be consumed as an aperitif with olives, antipasto, walnuts, cheeses and biscuits.

Marsala



Ruby port mixed with white port then we have added herbs, spices and some dark chocolate for one month. Can be consumed or used as a cooking wine.

Vermouth



Vermouth is a fortified wine with a number of different herbs added for flavour. We have used Viognier grapes picked early in the season when there was little sugar in the fruit and fermented the juice dry. We have then steeped the wine in herbs for up to 1 month.

This Vermouth is beautiful when used to glaze roasts, great in Martinis or as a long drink with soda water or lemonade.
