Ruby port mixed with white port then we have added herbs, spices and some dark chocolate for one month. Can be consumed or used as a cooking wine.

From the Sicilian area in Italy, Marsala. Spirit was added to white and red port then a muslin bag full of herbs and spices would be steeped in it for up to three months. It was drunk as an aperitif with Parmesan or other cheeses, fruits and pastries.
Can be reduced on the stove and used as a thick sauce or poured over your meat of choice then baked in the oven. Marsala Chicken, beef, shrimps and veal are popular meal choices.
