Vermouth

Vermouth is a fortified wine with a number of different herbs added for flavour. We have used Viognier grapes picked early in the season when there was little sugar in the fruit and fermented the juice dry. We have then steeped the wine in herbs for up to 1 month.

This Vermouth is beautiful when used to glaze roasts, great in Martinis or as a long drink with soda water or lemonade.

The 2 main herbs used are Wormwood and Sage along with a number of others.

Wormwood has a healing property and is particularly good for the intestinal lining in the gut. Wormwood was also used to make the infamous Absinthe, which sent Van Gough into wild Hallucinations.

Absinthe - In the early years absinthe is historically described as a distilled, highly alcoholic (45%–74% ABV) beverage. It is an anise-flavoured spirit derived from herbs, including the flowers and leaves of the herb Artemisia absinthium, commonly referred to as "wormwood"
